Cooking with the Spadas, Another Family Tradition
As war raged across much of the globe, folks on the home front were forced to make do with less. Women suddenly found themselves working on factory floors around the clock, with less time to prepare family meals. Pressed for time herself, Mary Spada decided to package and sell ready-to-serve coleslaw in eight ounce containers.
Before long, pre-packaged tomatoes, celery and spinach were added to the fresh, ready-to-serve product line. At that time, United Salad Co. was the only distributor in Portland of pre-packaged fresh produce for the retail trade. Kienows and Safeway were among Mary’s first customers.
The label she started was named Mary’s Pride™ and is still popular today. Her label proudly graces packages of hand-cut and packaged produce, and the fruit grown in the family’s orchards in the fertile Yakima Valley. Every Mary’s Pride™ product represents the family’s heritage of premium quality food prepared with tender loving care.
Along with her work, Mary also took great pride in the dishes she lovingly prepared for her family. With a passion for cooking, each season was celebrated with the best produce available. Fall brought made-from-scratch Artichoke Patties. Winters were brightened with fresh Shrimp Coleslaw. Spring always delivered delectable Seaside Peas. And Mary’s prized peach pie was the sure sign that summer had finally arrived.
Today, the Spada sisters continue in their grandmother’s and mother’s footsteps and create wonderful seasonal dishes that call for the freshest local produce available.
